A completely new dish for Estate Bottled Foods customers from Jean Luc Blandin, who is rapidly becoming quite a cult figure. Jean Luc was the first butcher in Normandy to be granted Fabrication Gourmande status, an acclaimed award which warranted national television coverage. This latest creation is only going to further enhance his reputation. He has skilfully cooked tender pieces of Normandy Lamb in a Calvados sauce along with locally grown carrots, onions, turnips and white haricot beans. Normandy is noted for its pré salé, or salt meadow lamb, which comes from flocks that graze freely on the salt marshes of the coastal estuaries. The meat acquires a unique delicate salty flavour. And of course Calvados, the apple brandy produced in the region, is a popular ingredient in any Normandy dish. The result, as it always is with Jean Luc, is perfection. The dish is rich hearty and warming. Enjoy simply served with crusty French bread or creamy mashed potato for an authentic Normandy culinary experience.
